Oatmeal Chocolate Chip Muffins

Ingredients

  • 1 1/4 cup rolled oats
  • 1 1/4 cup milk
  • 1 egg
  • 1/2 cup vegetable oil
  • 3/4 cup firmly packed brown sugar
  • 3/4 cup semisweet chocolate chips
  • 1 cup chopped pecans
  • 1 1/4 cup all purpose flour
  • 4 tsp baking powder
  • 1 tsp salt

Preparation

Step 1

Combine oats and milk; allow to stand 15 minutes. Stir egg, oil, 1/2 c. brown sugar, choc chips and 1/2 pecans into oat mixture. In a large bowl, combine flour, baking powder, and salt. Add oat mixture to flour mixture, stirring just until all dry ingredients are moistened. Fill each cup 2/3 of batter. Sprinkle top w/ remaining brown sugar and pecans. Bake at 400 for 20 - 25 minutes.
