Ingredients

  • 2 kielbasa sausages (about 2 lbs total)
  • 15.5 oz can red kidney beans
  • 15.5 oz jar boiled onions, drained
  • 1 cup chicken stock
  • 1/2 cup chopped fresh parsley
  • 4 carrots, quartered lengthwise and sliced diagonally
  • 2 garlic cloves, minced
  • Salt and freshly ground pepper

Preparation

Step 1

Place sausages in large saucepan. Add water to cover and boil 45 minutes. Drain well. Halve sausages lengthwise; cut into ¼ inch slices. Return to saucepan and add remaining ingredients. Simmer until vegetables are tender, about 30 minutes. Drain well.
