Cream Puffs II

Ingredients

  • 1/2 cup butter
  • 1 cup boiling water
  • 1 cup sifted all-purpose flour
  • 1/4 teaspoon salt
  • 4 eggs

Preparation

Step 1

Pre-heat oven to 450.

Melt butter in boiling water. Add flour and salt and stir vigorously. Stir constantly until mixture forms a ball that doesn't separate. Remove from heat and cool slightly. Add eggs one at a time, beating vigorously after each until smooth.

Drop dough by heaping tablespoons 3 inches apart on a greased cooking sheet. Bake 15 minutes, then turn temperature down to 325 for 25 minutes. Remove from oven and split. Turn off oven and put back in to oven to dry, about 20 minutes.

REmove from cooking sheet and cool on rack.
