THM-S Quick Mix Waffles & Pancakes with Coconut Flour

Ingredients

  • Quick Mix Master:
  • 2 cups Golden or brown flax seed.
  • 1 cup coconut flour
  • 2 TBS baking powder
  • 1/2 tsp salt
  • Waffles:
  • 2 eggs beaten
  • 1 tsp coconut oil
  • dash of vanilla
  • 4 TBS quick mix (or 3 TBS + 1 TBS cocoa powder)
  • 1/4 of a 1/4 tsp measuring spoon stevia (1/16)
  • Cinnamon or vanilla or other flavors you might want to add.
  • Pancakes:
  • 1 Eggs beaten
  • 1 TBS coconut oil
  • 4 TBS water
  • 3 TBS quick mix (or 2 TBS + 1 TBS cocoa powder)
  • 1/4 of a 1/4 tsp measuring spoon stevia (1/16)
  • Cinnamon or vanilla or other flavors you might want to add.
  • Any type of FP fruit (optional)

Preparation

Step 1

Mix together in a bowl or food processor. Make sure there are no lumps left in the mix. The food processor will mix it quickly and make a finer blend.

Pour into a mason jar. Seal and label the jar.

Like with bisquick it is basically the amount of eggs and water you use that makes the difference.

Waffle Directions:
Mix together. Let sit while waffle iron heats up. Pour into waffle iron. Cook according to waffle iron directions.

Pancake Directions:
Mix well. Let sit while griddle comes to temp (325 on an electric griddle or med on stove top). Using a 1/4 cup measuring cup pour onto the griddle. The top needs to be mostly dry across the top before flipping over.
