Ingredients
- Makes approximately 60 pot stickers
- 9 - 10 ounces ground pork, chicken, turkey or combination
- 1 can salad shrimp
- 1 can water chestnuts, chopped
- 3 green onions, finely chopped
- 6 dried mushrooms, shiitake - soaked and finely diced
- 1/2 tsp. sugar
- 4 tsp. sake or dry sherry
- 5 tsp. soy sauce
- 1 tbsp. cornstarch
- 1 egg
- 1 package wonton wrappers (approximately)
Preparation
Step 1
FILLING:
Combine all ingredients in a bowl and mix well.
ASSEMBLY:
Working with 3 or 4 at a time, cut corners off wrappers and set aside, lightly covered with a damp paper towel. (Empty shrimp can makes a good guide)
Line 6 wrappers up on a board and brush top half lightly with flour. Place a teaspoon or so of the filling in the centre of each wrapper (small cookie scoop works well) and fold wrapper over, pressing to seal.
Place on a parchment-lined baking sheet as made, then freeze until firm. Remove and place in a zip-lock bag and freeze.
TO SERVE:
Heat a bit of olive or peanut oil in a non-stick frying pan with a lid. Add desired number of Pot Stickers and saute briefly on each side until just golden.
Carefully pour chicken stock in and around Pot Stickers and cover with a lid, cooking over medium-low heat, turning once and adding more broth as necessary, until done, 10 to 15 minutes.
Serve with Pot Sticker sauce.
