Ingredients

  • 1 c. finely chopped pecans
  • 1/2 c/ brown sugar
  • 1/2 c. corn syrup
  • pinch of salt
  • 2 tsp. vanilla
  • 1 tsp. cinnamon (opt)
  • 1/4 c. butter
  • 1 T. lemon juice
  • 2 eggs, beaten

Preparation

Step 1

In medium saucepan, add all the ingredients except eggs. Cook over medium heat til comes to a simmer. Take off heat. Incorporate into eggs slowly, then add back to pan & cook til simmers again. Stir constantly for about a minute or til thickens. Put into hot jars & seal. Keep refrigerated.
