Poached Eggs over Paleo "Grits"****

Ingredients

  • 2 eggs
  • 1 tsp salt
  • 2 tsp white vinegar
  • 1 bowl of "grits"(recipe is posted in this cookbook)

Preparation

Step 1

-Fill saucepan with 1" water, salt and vinegar.(use pan that has lid)
-Bring to simmer over med heat.
-Break each egg into separate ramekins.
-Once water is simmering, stir water to create whirlpool .
-Gently pour each egg into swirling water.
-Cover with lid and simmer for 5 min.
-Remove from heat, lift eggs out with a slotted spoon.
-These look great served on top of the grits.
