Brussel Sprouts with Bacon

Ingredients
- 1/4 lb. bacon, diced
- 1 T EVOO
- 2 t butter
- 1/4 onion, diced
- 2 cloves minced garlic
- salt & pepper to taste
- 1/2 cup balsamic vinegar
- 1 1/2 lbs. brussel sprouts, trimmed and cut in half
- 2 cups chicken stock

Step 1
Place bacon in large, deep skillet and cook over medium-high heat, stirring occasionally until browned, but not crispy. Remove bacon and then pour off all but 2 T bacon grease from pan. Stir in EVOO, butter, onion and garlic. Season with salt & pepper. Cook and stir until the onion softens and garlic lightly browns.
Stir in the balsamic vinegar and bring to a simmer, cook until the liquid has reduced by 1/3. Add the reserved bacon, the sprouts and the chicken stock. Bring to a boil over high heat. Reduce heat & simmer until sprouts are tender, yet slightly firm (about 10 min.)
