- 4 oz cream cheese
- 1/4 cup sour cream
- 1/2 tbsp. honey
- 1/2 tsp freshly ground black pepper, plus more for garnish
- 1/4 tsp kosher salt
- 5 oz sliced cocktail size rye or pumpernickel bread (2 1/2 inch squares)
- 2 4-oz packages thinly sliced smoked salmon
- 1 medium cucumber, peeled
- 1/4 cup minced red onion
- fresh dill sprigs

Step 1
combine the cream cheese, sour cream, honey, pepper and salt in a bowl; beat at medium high speed with an electric mixer until smooth, about 1 mins.
cut each bread slice in half diagonally. separate the salmon slices, and cut into 30 strips. spread 1/2 tsp of the cream cheese mixture onto each bread triangle. using vegetable peeler, cut the cucumbers into 30 think slices, about 1 inch wide, working around the seeds in the center. roll a cucumber slice inside each piece of salmon; place over the cream cheese spread on the bread triangles. dollop 1/2 tsp of the cream cheese mixture over the salmon. sprinkle with the onion and a little more pepper; garnish with dill and serve immediately.
