Ingredients

  • 1 cup sugar
  • 1/4 cup water
  • 7 egg yolks
  • 1/2 cup lime juice or to taste
  • 2 cups whipping cream, whipped
  • green food coloring (optional)

Preparation

Step 1

Combine sugar and water in medium saucepan and cook over medium-high heat until candy thermometer registers 240 (soft-ball stage). Mix egg yolks in blender. With machine running at highest speed, add sugar mixture in slow steady stream and mix well. Transfer to large bowl of electric mixer and beat at medium speed until cool.

Add lime juice to egg mixture and blend well. Gently fold in whipped cream. (Add green food coloring if more intense color is desired.) Pour mixture into 8 to 10 small soufflé dishes and freeze until serving time.
