COCONUT RICE WITH FRESH GINGER AND CILANTRO

Ingredients

  • 1 1/4 c vegetable broth
  • 1/2 c coconut milk
  • 1 tbs fresh ginger, grated
  • 1 tsp salt
  • 1 c uncooked basmati rice
  • 3 tbs fresh chopped cilantro

Preparation

Step 1

10 stir together broth, coconut milk, grated ginger. salt in a large saucepan; bring to a boil over high heat.

2) stir in rice, cover, reduce heat to low and cook 20 minutes or until liquid is absorbed and rice is tender.
stir in chopped cilantro.
