Ingredients
- 1 c. flour
- 1 tsp. salt
- 1 tsp. baking powder
- 2 T. sugar
- 1/2 tsp. cinnamon (opt)
- 2 eggs
- 1/3 c. milk
- 1 T. melted butter
- 1 1/4 c. diced fresh peaches
- 1/2 tsp. vanilla
- oil for frying

Preparation
Step 1
Combine flour, salt, sugar, cinnamon & baking powder. Whisk in eggs, milk & butter. Add vanilla. Fold in peaches. Heat oil to 375º. Ladle about 1/4-1/2 c. batter into hot oil. Cook about 2-3 minutes or til golden brown & floating. Remove from oil & drain on paper towels. Toss fritters in sugar or dunk in a simple powdered sugar glaze.
