Ham and Lentil Stew

Unlike beans, lentils do not require presoaking-they cook right along with the rest of the recipe.

Ingredients
- 1 lb fully cooked smoked ham, cut into 1/2 inch cubes (about 3 C)
- 4 celery stalks, chopped
- 4 carrots, chopped
- 1 large onion, chopped
- 2 cans (10.5 oz each) chicken broth
- 2 C (1 lb) lentils, rinsed
- 4 C water
Preparation
Step 1
1. Mix all ingredients in 5 to 6 qt slow cooker.
2. Cover and cook on LOW 8-10 hours or until lentils are tender.
