Ingredients
- 1 box of chocolate turtle Biscotti (10 cookies)
- 2-8 ounce containers room temperature Mascarpone
- zest 1 lemon
- 1/2 cup of powdered sugar
- 1/4 cup of granulated sugar
- 1 teaspoon of pure vanilla extract
- 1/2 pint of blackberries
- 1/2 pint of blueberries
- 1/2 pint of raspberries
- 10 large strawberries hulled and quartered
- 2 sprigs of fresh mint
Preparation
Step 1
Set up 6 serving glasses on sheet tray
Crumble 10 chocolate Biscotti cookies
Add the mixed berries (reserving a mix for the top) with 1/4 cup of granulated sugar. Macerate for 5 mins.
Mix Mascarpone, vanilla, powdered sugar, and lemon zest together.
Layer the ingredients starting with Biscotti, Mascarpone cream, then berries
Repeat the process ending with the reserved fresh berries and crumbled Biscotti on top
Garnish with fresh mint.
