Mexican Quiche

Ingredients

  • 1/2 c refried beans
  • 1 9in pie crust
  • 1 lb. sirloin steak
  • 1 onion chopped
  • 3 cloves garlic
  • 2 T olive oil
  • 1 4oz can green chilis
  • 1 1/2 c grated pepper jack cheese
  • 4 eggs
  • 1/2 c sour cream
  • 1/2 c parmesan cheese

Preparation

Step 1

1. Preheat oven 375. Spread refried beans onto bottom of pie crust. Cut steak into 1/2 inch pieces. Brown steak with onion and garlic in olive oil. Remove from pan with slotted spoon and place in crust. Sprinkle chilis over all. Sprinkle chees over all.

2. Combine eggs, sour cream. Pour over. Put parmesan cheese on top

Bake 35 - 40 minutes.

Can freeze. Thaw and reheat 350 for 20-25 minutes.
