Lentil Soup

Ingredients

  • 1 lb lentils
  • 8 cups liquid- i used Imagine "no chicken" broth
  • olive oil
  • 1 onion
  • 2 stalks celery
  • 2 carrots
  • 1 turnip
  • 1 parsnip
  • 1 or 2 cloves garlic
  • 1 lb pasta- used shells
  • salt & pepper

Preparation

Step 1

Chop veggies,
Sweat onion in olive oil, add other veggies & saute til tender (add garlic last to avoid burning it); add salt & pepper to taste
Add liquid, simmer
Remove any debris from lentils; rinse lentils & add to soup
Simmer 30 mins or more; taste to check for seasoning, add more salt, pepper if necessary
Cook pasta in boiling salted water & add to soup
