Ingredients
- 1 cup shredded mozzarella
- 1 cup shredded cheddar
- 1 cup shredded Mexican Blend
- 2 cups tomatoes, small diced
- 1/4 cup cilantro, small chopped
- 2 cups black beans, drained and rinsed
- 1 yellow onion, small diced
- 1 Tbsp. olive oil
- 1-2 jalapenos, small dice
- 2 Tbsp. taco seasoning
Preparation
Step 1
Heat oil in a skillet and saute onion until soft. Add taco seasoning and saute 30 seconds longer. Transfer to slow cooker, followed by tomatoes, jalapenos, half the cilantro and beans. Sprinkle with the cheeses on top and cover.
Cook on high for 2 hours, or on low for 4 hours.
Mix in remaining cilantro and serve with tortilla chips.
