Ingredients

  • 1 pound lobster meat
  • 8 ounces cream cheese
  • 1/2 cup low-fat mayonnaise
  • 1 cup coarsely-chopped parsley leaves
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons lemon juice
  • Salt to taste
  • Freshly-ground black pepper to taste
  • 4 long hard rolls - (5 to 6 oz ea)

Pick over the lobster meat to remove any membrane or shell and set aside in a medium bowl.

In the work bowl, of a food processor, combine the cream cheese, mayonnaise, parsley, Worcestershire sauce, lemon juice, salt, and pepper. Puree the mixture and taste for seasoning.

Add the cream cheese mixture to the lobster and stir or combine. Split the rolls lengthwise, leaving one long side attached, and spoon in the lobster filling. Wrap securely in plastic wrap followed by foil to pack for a picnic, or enjoy right away.
