Spinach & Cheese Stuffed Chicken

Ingredients

  • 4 Boneless & Skinless Chicken Breasts
  • 1 1/4 cups Fresh Spinach, chopped
  • 2 cloves Garlic, minced
  • 1 Shallot, finely diced
  • 1 cup Ricotta Cheese
  • 1/2 cup Parmesan Cheese
  • 1/2 tsp Ground Nutmeg
  • 3 Tbsp Olive Oil
  • Kosher Salt, to taste
  • Ground Black Pepper, to taste

Preparation

Step 1

Using wax paper and a mallet, pound out the chicken.

In a large skillet warm up 1 Tbs of olive oil over medium heat. Toss in the garlic, shallot, and spinach. Season with salt and pepper. Sauté until shallots are tender and spinach is wilted.

Transfer to a bowl and add the ricotta and parmesan cheese. Stir to combine thoroughly.

Place about a spoonful of the spinach and cheese mixture onto the middle of each chicken breast.

Roll and fold the chicken over the stuffing. Secure with toothpicks.

Using the same skillet, warm up the rest of the olive oil over medium heat. Place the chicken breasts in, brown all sides, and cook for 10-12 minutes.

Remove toothpicks and serve.
