Ingredients

  • 2

    Lemons squeezed (1/3 c to 1/2 c lemon juice)

  • 1

    cup sugar

  • 3

    egg yolks

  • 1

    cup water

  • 3

    T cornstarch

  • Meringue:

  • 3

    egg whites

  • 1/4

    tsp cr tartar

  • 6

    T sugar

  • 1/2

    tsp vanilla

Directions

Mix egg yolks in water then add sugar and lemon juice. Let this mixture come to a boil. Put the cornstarch in a little water to mix and then slowly add to boiled mixture stirring until thickened. Pour this mixture into a BAKED PIE SHELL and frost with meringue. MERINGUE: Beat egg whites and cr of tartar to stiff peaks Beat in sugar 1 T at a time Beat in vanilla Bake 400 for short 10 min.
