AGURKESALAT (CUCUMBER SALAD)

- 1 large European or Japanese cucumber
- 1/2 cup water
- 1/2 cup fresh lemon juice
- 3-4 tblsp sugar
- freshly ground pepper
Slice cucumber as thin as possible. Combine water and lemon juice with sugar to taste. Add cucumber an sprinkle liberally with pepper. Let stand an hour or so before serving.
