Ingredients
- Icing:
- 4 sticks salted butter, softened
- 1 1/2 c. sugar
- 2 large egg yolks
- 1 T. lemon zest
- 1 T. lime zest
- 4 c. flour
- 2 T. lemon or lime juice (or 1 T. of each)
- 1/2 tsp. coconut extract
- 3 c. powdered sugar
- 2 T. cream of coconut
- 1 T. lemon zest, plus more for decorating
- 1 T. lime zest, plus more for decorating
- 1 T. milk
- 1 tsp. coconut extract
- dash of salt
- 1 large egg white
- juice of 1 lemon
- juice of 1 lime

Preparation
Step 1
Heat oven to 350º. Cream butter & sugar til well combined. Add the egg yolks; mix well. Add the zests. Add the flour & mix til just combined. Add the juice & coconut extract; mix just til dough comes together.
Roll 1 T. dough & place on cookie sheet. Bake 12-13 minutes or til just beginning to brown. Remove from oven & let cool 3-4 minutes before removing to cooling rack to cool completely.
Combine all icing ingredients; whisk thoroughly.Drizzle over cookies & garnish with zests.
