Vegetable Quiche

Ingredients

  • Crust:
  • 1 c. and 2 T. flour
  • 1/8 tsp salt
  • 1/3 cup oil
  • 2 T. water
  • Quiche:
  • 1/4 - 1/3 lb. cheese. I like a mix of swiss and cheddar
  • 1/2 lb. sauteed spinach
  • 1/2 lb. mushrooms
  • Asparagus
  • Snippets of fresh herbs: basil, thyme
  • 4 eggs
  • 1 1/2 c. milk.
  • Avocados
  • Parmesan cheese

Preparation

Step 1

Prepare Crust:
Mix 1 cup and 2 T. flour with 1/8 tsp. salt in small bowl, using a fork. Add 1/3 c. oil and continue stirring until mixed. Sprinkle water on top. Stir until dough is well mixed and rolls into a ball. Put into quiche pan and spread out to cover the bottom and up the sides.
Bake at 425 for 5-7 mins.

Let crust cool for ten minutes. Then layer bottom with the cheese. Combine vegetables and herbs and place on top of the cheese. Mix together the eggs and milk and pour over the vegetables. Sprinkle with parmesan if desired.

Bake quiche at 375 for 35-40. To serve, place avocado slices on top.
