Brisket Mopping Sauce

Ingredients

  • 12 oz beer of choice
  • 2 T cider vinegar
  • 1 T paprika
  • 1 T hot sauce (I use Texas Pete)
  • 1 t cayenne pepper
  • 1 t black pepper
  • 1 t kosher salt
  • 2 cloves garlic, crushed
  • 1 med onion, chopped
  • 1/4 cup oil

Preparation

Step 1

Mix all ingredients except oil and refrigerate overnight so that flavors really blend. Add oil just before you start basting the brisket. I would begin basting after 3 or 4 hours of smoking time, and then each hour after until you reach temp.
