Thai Chicken Salad Wraps

Ingredients

  • SALAD:
  • Spinach flavored tortillas
  • 2 cans chunk light chicken
  • 1.5 cups coleslaw mix
  • 1/2 cup chopped seeded cucumber
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup coarsely chopped dry-roated peanuts
  • DRESSING:
  • 1 Tbsp packed brown sugar
  • 2 Tbsp creamy peanut butter
  • 2 Tbsp rice vinegar or cider vinegar (white vinegar ok)
  • 1 Tbsp fish sauce
  • 1/8 tsp ground red pepper
  • (DOUBLING THIS IS BEST)

Preparation

Step 1

Mix dressing ingredients together in a small bowl with a wire whisk until smooth. Set aside. Combine salad ingredients in a larger bowl. Toss with dressing. Spoon chicken mixture into tortillas and roll up.
