Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-in strips
- 1/2 cup frozen orange juice concentrate, thawed
- 4 cloves garlic, minced
- 2 large eggs
- 2.5 cups frosted flakes cereal, crushed (I use bread crumbs)
- 2/3 cup shredded unsweetened coconut (sweetened ok)
- 2 Tbsp. light brown sugar
- 3 Tbsp. butter, melted
Preparation
Step 1
In a resealable bag, toss the chicken togethter with the o.j. and half the garlic. Marinate the chicken in the fridge 2-8 hours, turning occassionally.
Preheat oven to 400 deg and lightly grease a baking sheet or dish. In a small bowl, beat the eggs. In a large bowl, combine bread crumbs, coconut, brown sugar and remaining garlic. Then drizzle melted butter over bread crumb mixture and mix thoroughly.
Dip ea. chicken piece into the egg, shake off drips, and place in frosted flake mixture. Pat the coating on both sides of the chicken and place on the prepared baking sheet. Bake 12-14 min or until crisped, browned and cooked thru (needs at least 30 minutes if using breasts instead of fingers).
