Red Enchilada Sauce - Ron Miller
This is a homemade red enchilada sauce that Ron Miller made up! It's absolutely fabulous!!!

Ingredients
- 1 large bag of New Mexico dried red chiles - break or cut stems off of chiles (it's okay for the seeds to go into your sauce - you will be straining it).
- Cover with chicken stock
- 3/4 cup chopped sweet onion
Preparation
Step 1
1. In a large cooking pan add the bag of red chiles, cover with chicken stock. Add onion and boil for about 20 minutes.
2. Strain and taste. If too hot, mix in 1 can of Hatch mild red enchilada sauce (use Hatch because it doesn't have vinegar in it. Rule is never add vinegar to your own enchilada sauce).
