  • 6 tbsp. extra virgin olive oil
  • 3/4 cloves garlic finely chopped
  • 1/2 cup dry white wine
  • 1 1/2 fresh plum tomatoes, peeled and chopped or canned plum tomatoes drained and chopped
  • salt
  • freshly gound white pepper

Step 1

In a frying pan over medium heat, warm the olive oil. Add the garlic, reduce the heat to very low and cook very slowly so the garlic takes on its distinctive golden color without burning about 5 minutes. Add the white wine, raise the heat to high and cook until the wine evaporates, 2-3 minutes. Add the tomatoes, salt to taste and plenty of white pepper. Cook uncovered, stirring often, until light and slightly thickened,, about 5 minutes. Meanwhile, cook yur choice of pasata until al dente. Drain and transfer to a warmed serviding dish. Immediately pour the sauce over the pasta and serve at once.
