Chicken with White Wine

  • 4-6 boneless skinless chicken breasts
  • 1/2 c white wine
  • 1/2 c butter
  • 1/2 t minced garlic
  • 1/2 t dried oregano
  • salt & pepper, to taste

Preparation

Step 1

Spray a 9x13" baking pan with cooking spray. Place chicken breasts in a single layer in pan. Melt the butter over medium/low heat; pour in wine, add seasonings and stir. Remove from heat. Pour the wine mixture over the chicken breasts, and bake in a 350 deg oven for 40 minutes. Remove the chicken breasts from the pan; place them on a broiler pan and broil for a few minutes, just to brown them.

Meanwhile, pour the remaining wine mixture into a sauce pan over medium/low heat an thicken as you would gravy. Place the chicken on a platter and drizzle some of the sauce on top. Put the rest of the sauce in a gravy boat. Serve with wild rice, steamed asparagus spears and a crusty bread.
