Ingredients

  • 4 TBS butter
  • 3/4 c finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped green pepper
  • 1/4 cup finely chopped green obnionbs
  • 2 TBS Cajun/creole seasoning
  • 1 TBS worcestshire sauce
  • 2 tsp minced garlic
  • 2 bay leaves
  • 1/2 cup evaporated milk
  • 1/2 cup ketchup
  • 1 1/2 lbs ground beef
  • 1/2 lbs ground pork
  • 2 large eggs, lightly beaten
  • 1 cup fine dry bread crumbs

Step 1

1. Oven 350 degrees. Melt butter in one quart saucepan over medium heat. Add onion, celery, bell pepper, green onions, seasonings, Worcestershire sauce, garlic and bay leaves. Saute until mixture starts sticking excessively, about 6 minutes. Stir occasionally and scrap pan bottom well. Stir in milk and ketchup. Cook about 2", stirring occasionally. Cool to room temperature. Discard bay leaves
2. Place ground beef and pork in ungreased 13x9" pan. Add eggs, cooked vegetable mixture and bread crumbs. Mix by hand until thoroughly combined.
3. In center of pan shape mixture into a loaf that is about 1 1/2" high, 6" wide and 12" long. Bake uncovered for 25", then increase heat to 400 degrees and cook until done, about 35" minutes longer. Serve immediately.
