Plantain Bread

Ingredients

  • 1 c mashed ripe plantains
  • 1/2 bar margarine
  • 1 1/4 c flour
  • 2 eggs
  • 1 1/2 c sugar
  • 1 tsp baking soda
  • 4 tbls sour cream or yogurt
  • 1 tsp vanilla
  • 1 tsp baking powder

Preparation

Step 1

1) beat margarine until soft, add sugar, eggs, and sour cream.
2) Blend plantains, flour, baking soda, and baking powder. Add them to the previous mixture. Add and beat vanilla thoroughly.
3) Pour the mixture into a greased and floured pan.
4) Bake in preheated oven at 350 degrees about 1 hr. Check with wooden toothpick. When it comes out dry it is done.
