Ingredients
- 8 oz box of penne
- 1 lb asparagus
- 1/4 cup parmesan cheese pieces
- 2 tbsp virgin oil
- 1 tbsp lemon juice
- 1 tsp grated lemon zest
- Kosher salt and black pepper
Details
Preparation
Step 1
Cook pasta according to package directions and add asparagus during last 3 1/2 minutes of cooking. Drain
and rinse under cold water to cool. Put in large bowl
Add the parmesan cheese, oil, lemon juice and zest, 1/2 tsp salt, and 1/4 tsp pepper.
Toss to combine
