Roasted Sweet Potato, Kale, and Farro Salad

Ingredients

  • Dressing:
  • 3/4 cup farro
  • 2 sweet potatoes, diced
  • Kale – 1 large bunch
  • 1 small granny smith apples
  • 1/4 cup roasted nuts
  • Parsley
  • Parmesan Cheese, grated.
  • 3 TBSP oil
  • 1 clove garlic
  • 3 tsp honey
  • 1 1/2 tsp apple cider vinegar
  • 1/4 heaping tsp cinnamon
  • 1/4 tsp sage
  • Salt and pepper

Preparation

Step 1

Cook farro for 30 minutes uncovered. Roast sweet potatoes (with olive oil, salt, pepper, and red pepper flakes) at 400 for 30 minutes. Roast kale for 10 minutes. Roast nuts for a few minutes.
