Parmesan Penne with Pancetta

Ingredients
- COOK:
- 8 oz. dry penne pasta
- HEAT:
- 2 Tbsp. olive oil
- 3 oz. pancetta, diced
- ADD:
- 1 Tbsp. minced fresh garlic
- 1/2 cup dry white wine
- 1/4 cup grated Parmesan
- 2 Tbsp. minced fresh parsley
- Salt and black pepper to taste

Preparation
Step 1
Cook pasta in a large pot of boiling salted water according to package
directions; drain.
Heat oil in a large skillet over medium. Add pancetta and cook until crisp. Transfer pancetta to a paper-towel-lined plate. Drain off all but 2 Tbsp. drippings. Add garlic to skillet and cook over medium-high heat until fragrant, 30 seconds. Deglaze pan with wine and reduce by half, 2 minutes. Stir in pasta, tossing to coat, then stir in Parmesan, parsley, and pancetta;
season with salt and pepper.
