PINA COLADA PANCAKES

Ingredients

  • 2 eggs
  • 1/2 cup crushed pineapple, not drained
  • 1/3 cup pineapple juice or milk
  • 1/2 cup melted butter
  • 1/4 cup canned cream of coconut
  • 1/2 tsp rum extract
  • 1 1/4 cups flour
  • 1 tbsp sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • Vegetable oil

Preparation

Step 1

In a medium bown, beat eggs. Stir in crushed pineapple, pin3apple juice, butter, cream of coconut and rum extract. In a large bowl, stir together flour, sugar, baking powder and salt.

Pour the egg mixture into the flour mixture and stir just until the dry ingredients are moist.

Heat a skillet over medium heat; brush lightly with oil. Using 1/4 cup batter per pancake, ladle batter on to the skillet. Cook pancakes until bubbles appear on their surface. Turn pancakes and cook other side until golden brown.

Serve pancakes with warmed maple syrup or a mixture of equal parts maple syrup and cream of coconut.
