Ingredients
- 3 lbs sweet potatoes, peeled and sliced crosswise into 1/2 in thick rounds
- 2 tlbs canola or grapeseed oil
- salt
- 1 c coarsely choped pecans
- 1 /c packed dark brown sugar
- 1/4 c cane syrup (such as Steen's)
- 4 tlbs (1/2 stick) butter, melted
Preparation
Step 1
Preheat oven to 400 F
In medium bowl, combine sweet potatoes with oil and 1/2 tsp salt; toss to coat well. In 18" by 12" jell-roll pan, arrange sweet potatoes in single layer, if possible. Roast 30 minutes or until they begin to caramelized and soften.
Meanwhile, in small bowl, combine chopped pecans, brown sugar, cane syrup and butter.
Transfer pototoes to shallow 2 to 3 qauart casserole. Pour pecan mixture over potatoes and with spatula, toss gently to coat well.
Bake 30 minutes or untik potatores are caramelized and tender, carefully stirring once.
