Ingredients
- 3 LBS yukon gold potatoes, peeled & cut into 2" cubes
- S & P
- 1-1/4 C heavy cream, chilled
- 1-1/2 C (abt 3oz) grated gruyere or parmesan cheese
Preparation
Step 1
MICROWAVE POTATOES
place potatoes in lg microwave safe bowl
cover tightly w/ plastic
microwave on high until tender, 8-10 min, shaking bowl halfway through cooking
set ricer over second lg. microwave safe bowl
press potatoes into bowl
cover tightly w/ plastic wrap
microwave riced potatoes until heated through, 3-5 min
season w/ S & P
WHIP CREAM
adjust oven rack to upper 3rd position & heat broiler
w/ electric mixer on med speed, beat cream until stiff peaks form, abt 2 min
gently fold 2/3rd of whipped cram into potatoes w/ rubber spatula until absorbed
dollop potatoes in broiler safe 2 qt baking dish
BROIL
w/ rubber spatula, fold 1 1/4 C cheese into remaining cream
spread over potatoes
sprinkle w/ remaining cheese
broil until top is golden, 2-3 min
let rest abt 4 min
serve
