  • 1 cup stone ground cornmeal
  • 1/2 tsp salt
  • 2 TBS unsalted butter
  • 1/2 cup whole milk
  • 1 TBS boiling water

Step 1

1. Cream the cornmeal, salt, and butter together. Add the milk and enough water to make a moist but firm batter.

2. Drop batter by large spoonfuls onto a hot greased griddle, and flatten slightly with the back of a spoon. When brown, turn and cook the other side.

Makes 2 servings. Each serving = 10 Weight Watchers points.
