Ingredients
- 2 pounds boneless, skinless turkey breast, cut into 2 x 1/2-inch slices
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon minced fresh ginger
- Salt and pepper to taste
- 1/4 cup lime juice
- 3 cups hot, cooked couscous
Preparation
Step 1
Combine all ingredients except couscous in your crock pot.
Cover; cook on Low 6 to 8 hours (High 3 to 4 hours).
Serve over couscous.
SERVING SUGGESTION: Try some baked sweet potatoes, steamed broccoli and a salad, if you like.
VEGETARIANS: Use 1 can garbanzo beans and a can of red kidney beans, both drained and rinsed instead of the chicken. (cans should be 15 oz.) Add 1 15 ounce can diced tomatoes, too.
