Ingredients
- 2 cups fresh basil leaves, trimmed and thoroughly dried
- 3 cloves garlic
- 2 1/2 tablespoons pine nuts
- 1/2 cup parmesan cheese, grated
- 2 tablespoons olive oil
- 1/2 cup plain yogurt
- salt and pepper to taste
- 12 lean lamb loin chops on bone (about 3 oz. ea.)
Preparation
Step 1
Place the basil, garlic, pine nuts and parmesan cheese in food processor. Blend until well minced. While processor is running add the olive oil slowly through the blending tube. Process until the pesto is smooth and all the oil has been incorporated. Remove pesto to a bowl and stir in the yogurt. add salt and pepper.
Preheat broiler or grill.
Place chops on broiler rack or grill and broil 4 minutes. Turn chops and spread pesto evenly on chops. Broil or grill 3 minutes more. Chops should be medium rare. Cook several minutes more if you prefer well done.
Transfer chops to a serving platter and serve immediately.
