Mediterranean Salad

Ingredients

  • 1 Tbsp. red-wine vinegar
  • 2 Tbsp. extra virgin olive oil
  • 1 clove garlic, minced
  • 1/2 c. sliced jarred roasted red peppers
  • 1/2 c. chopped tomato
  • 1/2 c. thinly sliced portabello mushrooms
  • 1/2 c. thinly sliced cucumber
  • 1/4 c. crumbled reduced fat feta cheese
  • 2 Tbsp. chopped pitted Kalamata olives
  • 1/2 tsp. dried oregano
  • 2 c. loosely packed mixed baby salad greens

Preparation

Step 1

Whisk together vinegar and olive oil in a bowl. Add other ingredients except greens and toss. Add greens and toss again. Season with salt and pepper to taste.
