Avocado & Papaya Salad

Ingredients
- 2 avocados, peeled and cut into 8 wedges each
- 2 ripe papayas, peeled and cut into 1/2-inch-thick slices
- 1 navel orange, peeled and cut into segments
- 1 grapefruit, peeled and cut into segments
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- Kosher salt and freshly ground black pepper
- 8 fresh mint leaves, torn
- 3 tablespoons chopped fresh cilantro

Preparation
Step 1
Arrange avocados, papayas, oranges and grapefruit in a serving dish, then drizzle olive oil and lime juice over fruit. Season with salt and pepper to taste.
Combine mint and cilantro, then scatter over top of fruit. Serve immediately, or cover and refrigerate for up to 1 hour
