Guests come at 2, check the bird then. Should be done around 3:00 eat at 4:00.

10 to 13 pounds 2 3/4 to 3 hours
14 to 17 pounds 3 1/2 to 4 hours
18 to 21 pounds 4 1/2 to 5 hours
22 to 24 pounds 5 1/2 to 6 hours

Butter, salt and pepper inside of bird, and lightly stuff. Place on foil and butter salt and pepper the outside of bird. Secure legs and wrap string around bird to secure the wings. Place on heavy duty tin foil in pan, and cover the wings and legs with pieces of tin foil. Loosely wrap and cook for the appropriate time. Internal temperature should be 165 degrees.
