Ingredients
- 24 dried apricots
- 1/4 cup toasted almonds
- 1 clove garlic, smashed
- 1 tablespoon fresh mint, chopped
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
Preparation
Step 1
Slice apricots on one side to form a pitalike pocket.
Grind remaining ingredients in a small food processor until fine.
Stuff each apricot with mixture and serve.
