Creamy Tuna Noodle Toss

  • 6 oz. wide egg noodles
  • 1-1/2 c peas
  • 3 T butter
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 1/4 t pepper
  • 2 T flour
  • 1-1/4 c milk
  • 1-5 oz. can tuna, drained and broken into chunks
  • 1/2 c grated Parmesan cheese
  • 1 T lemon juice

Step 1

Cook noodles adding peas in the last 2 mins, drain and return to pan.
In medium sauce pan, melt butter. Add onions, garlic and pepper, cook and stir over med heat about 3 mins or until onions are just tender. Stir in flour until blended. Add 1 c milk. Cook and stir until thick and bubbly. Remove from heat. Add tuna and 1/4 c of Parmesan cheese.
Pour tuna mixture over noodle mixture. Toss gently to combine. Add remains milk one tablespoon at a time until desired consistency. Season to taste with salt. Drizzle with juice. Sprinkle with remaining cheese.
