Marcie's Pumpkin Cookies

Ingredients

  • 1 lb. butter
  • 2 cups sugar
  • 2 cups pumpkin (1 can)
  • 2 tsp. cinnamon
  • 1 cup raisins
  • 2 eggs
  • 2 tsp. vanilla
  • 4 cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 cup brown sugar
  • 1/2 cup milk
  • 6 Tbs. butter
  • 1 1/2 tsp. vanilla
  • 2 cups confectioners sugar

Preparation

Step 1

Beat butter until creamy. Gradually add sugar until mixture is smooth. Add pumpkin, eggs and vanilla. Beat batter well. Sift together flour, baking soda, baking powder, cinnamon and salt. Blend into creamed mixture. Stir in raisins.

Drop batter from teaspoon onto greased cookie sheet. Bake cookies in a 375° oven for 10 to 15 minutes, or until golden. Cool, then ice.

Icing: In saucepan combine the sugar, milk and butter. Cook mixture for 2 minutes, remove from heat, and let it cool. Stir in the vanilla and sugar. If too thick add a little more milk, if too thin add some more sugar.
