Ingredients
- Pizza Crust:
- 1/2 recipe pizza crust (see below)
- 1 cup red sauce (see below)
- 6-8 (1/4 inch thick) slices whole-milk mozzarella cheese
- 1 Italian sausage link, cooked and cut into 1/4 inch slices
- 1/2 cup thinly sliced red bell pepper
- 1-1/4 cups warm water
- 1 (1/4 ounce) package active dry yeast
- 2 tsp. sugar
- 3-1/2 cups flour
- 2 tsp. salt
- 3/4 cup extra-virgin olive oil, divided
- 2 tbsp chopped fresh oregano
- 2 tbsp chopped fresh basil
- 2 tbsp chopped fresh parsley
- yellow cornmeal
- Red Sauce:
- 3 tbsp extra-virgin olive oil
- 1/2 cup finely chopped onion
- 1 tbsp finely chopped garlic
- 1 (28-ounce) can crushed tomatoes, undrained
- 1 (6-ounce) can tomato paste
- 1/4 cup red wine
- 1-1/2 tbsp Italian seasoning
- 1 tsp salt
- 1 tsp sugar
- 1/2 tsp crushed red pepper
Preparation
Step 1
Pizza:
Prepar pizza crust according to recipe directions (see below), grilling one side of dough. Spread red sauce (see below) evenly over cooked side of crust. Layer mozzarella, sausage and red bell pepper over sauce. Return pizza to grill and grill over indirect heat, covered with grill lid for 7-10 minutes or until bottom of crust is browned. Transfer to a cutting board. Cut into wedges and serve immediately.
Pizza Crust:
In a small bowl combine warm water, yeast and sugar. Let stand for 5 minutes or until mixture is bubbly.
In a work bowl of a food processor combine flour and salt; process until combined. Slowly add yeast mixture and 1/4 cup oil processing until mixture forms a ball.
On a lightly floured surface place dough. Sprinkle with fresh herbs. Knead herbs into dough until dough is smooth and elastic, 5-6 minutes.
Lightly spray a medium bowl with nonstick cooking spray. Place dough in bowl turning to grease top. Cover loosely and let rise in a warm place free from drafts until doubled in size, about 45 minutes.
On a clean flat surface sprinkle heavily with cornmeal. Place 1 portion of dough in center of cornmeal and roll out to a 1/3-inch-thick, 12-15 inch round or rectangular pizza crust dough. Add toppings and cook as above.
Red Sauce:
In a large saucepan heat olive oil over medium-low heat. Add onion and garlic cook stirring frequently until onion is transluscent, about 10 minutes. Add crushed tomatoes, tomato paste and wine to onion mixture stirring well. Add Italian seasoning, salt, sugar and crushed red pepper, stirring well. cook stirring frequently for 15 minutes.
