Oven Fried Chicken Fingers with Honey Mustard Dipping Sauce

Ingredients

  • CHICKEN
  • 1.5 lbs chicken breast tenders
  • 1/2 c low fat buttermilk
  • 1 c coarsely crushed cornflakes
  • 1/2 c seasoned breadcrumbs
  • 1/2 c Chef Pauls Breading Magic Mix
  • 2 T minced onion
  • 2 t paprika
  • 1/2 t dried thyme
  • 1/2 t black pepper
  • 1 T vegetable oil
  • DIPPING SAUCE
  • 1/2 c honey
  • 1/4 c spicy brown mustard

Preparation

Step 1

1. To prepare sauce, combine mustard and honey in small bowl. Cover; chill.

2. Preheat oven to 400

3. Place chicken in shallow dish and cover with buttermilk, cover and chill 15 mins. Drain chicken, discarding milk.

4. Combine cornflakes and next 5 ingredients (cornflakes through pepper), coat chicken with mixture

5. Spread oil evenly in a jelly roll pan; arrange chicken in a single layer in pan. Bake at 400 for 5 mins each side until done. Serve with dipping sauce.
