Ingredients

  • Cooking spray
  • 1 TBS butter
  • 1/2 cup finely chopped Walla Walla or other sweet onion
  • 2 garlic cloves, minced
  • 1 (10 oz) bag fresh spinach, coarsely chopped
  • 1 1/2 TBS flour
  • 1 cup milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Dash of ground nutmeg
  • 1/4 cup (1 oz) grated fresh Asiago cheese
  • 1 slice white bread, torn into pieces (or bread crumbs)
  • 1 TBS chopped parsley

Preparation

Step 1

1. Preheat broiler.

2. Heat a large non-stick skillet over medium high heat. Coat pan with cooking spray. Add butter, swirl pan until butter melts. Add onion and garlic. Saute three minutes or until tender. Add half of the spinach. Cook two minutes or until spinach wilts, stirring frequently. Remove pan from heat.

3. Place flour in a small bowl. Gradually add milk, stirring with a whisk. Stir flour mixture into spinach mixture. Add salt, pepper, and nutmeg. Cook over medium high heat for three minutes or until thick and bubbly, stirring constantly. Remove from heat. Add cheese, stirring until cheese melts. Divide mixture evenly among four (4 oz) ramekins or custard cups coated with cooking spray. Place ramekins on a baking sheet.

4. Place bread in a food processor. Process until coarse crumbs measure 1/2 cup. Add parsley. Pulse three times or until combined. Sprinkle about 2 TBS breadcrumbs over each serving. Broil one minute or until browned.

Makes 4 servings. Each serving = 3 Weight Watchers points.
