Turkey Tortellini Soup

Ingredients

  • 1 TBSP butter
  • 1 medium onion, chopped
  • 6-8 garlic cloves, minced
  • 3 medium carrots, chopped
  • 1 package of uncooked turkey sausage (without casing)
  • 8 cups chicken broth
  • 6-8 oz frozen tortellini (three cheese is good)
  • 14oz can diced tomatoes + liquid
  • 10 oz (300g) spinach, chopped
  • 8-10 fresh basil leaves, chopped
  • Parmesan cheese for garnish

Preparation

Step 1

Melt butter in a large soup pot. Add garlic, onion, carrots, and turkey sausage and saute until turkey is cooked. Add broth and bring to a boil. Add tortellini and cook halfway (4-5 minutes). Pour in tomatoes and simmer for 1 minute. Stir in basil and spinach. If it won't all fit in the pot, add half of the spinach until wilted and the remainder as it fits. Simmer on low until spinach is completely wilted. Serve with parmesan cheese sprinkled on top.
